Abstract Health/nutrition food claims are increasingly used in the food industry but firms still require deeper research to develop a better understanding of consumers in the low-fat food market. In pursuit of this goal, this paper analyses the influence of projected consumer personality on healthy claim credibility, Perceived product health, physical appearance and its repercussion on attitudes (overall attitude to the product) and behaviours (purchase intention). Effect of extended famine conditions on aerobic granular sludge stability in the treatment of brewery wastewater

Results obtained from three aerobic granular sludge reactors treating brewery wastewater are presented. Reactors were operated for 60 d days in each of the two periods under different cycle duration: (Period I) short 6 h cycle, and (Period II) long 12 h cycle. Organic loading rates (OLR) varying from 0.7 kg COD m-3 d-1 to 4.1 kg COD m-3 d-1 were tested. During Period I, granules successfully developed in all reactors, however, results revealed that the feast and famine periods were not balanced and the granular structure deteriorated and became irregular. Pilot-scale thermophilic anaerobic treatment of wastewaters from seasonal vegetable processing industry

Thermophilic anaerobic treatment of food industry wastewaters was studied using a 0.65 m3 upflow anaerobic sludge bed (UASB) reactor. The reactor was operated at 55°C and placed on the premises of a factory manufacturing deep-frozen goods from vegetables. The hot (>80-90°C) and concentrated (COD 14-79 g/l) wastewater streams, deriving from steam peeling and blanching of carrot and potato were used. The UASB reactor was inoculated with a small amount of granular sludge from a full-scale mesophilic UASB reactor. Prior to inoculation, the inoculum was acclimated to 55°C for 2 days. The increase in foodborne outbreaks highlights the need for rapid, sensitive and specific methods for food safety monitoring, enabling specific detection and quantification of viable foodborne pathogens. Real-time PCR (qPCR) combined with the use of viability dyes, recently introduced, fulfils all these requirements.
